Looking for ideas for using up spare egg yolks. Keep reading I've put together ideas and recipes that need egg yolks. So next time you have egg yolks to use up you will not be stuck for ideas.

If you've been busy making pavlovas, meringues, macarons or any other bakes that require only egg whites and have been left you with a few egg yolks to use up .

Nobody likes food waste, so rather than let them go to waste, check out these ideas for using up egg yolks in your everyday cooking, as well a collection of recipes for delicious cakes and desserts that use egg yolks.

Quick ways to use up spare egg yolks

  • Whisk with a little water to make a glaze for pies or breads They will give a lovely rich golden colour to the crust.
  • Add to short crust pastry (reduce the water slightly) for a rich pastry crust.
  • Beat with a little milk before mixing into mashed potatoes
  • Add to whole eggs to enrich scrambled eggs or an omlette.
  • Make homemade mayonnaise
  • Add to mince when making meatballs, the egg helps bind the meat together and the meatballs to hold their shape.
  • Use a couple of yolks in place of a whole egg in a carbonara for a richer sauce.
  • Add to bechamel for a richer flavour.

Or better still use the spare egg yolks to make more delicious cakes, bakes or dessert.

Coffee and Walnut Chocolate Brownies
Who can resist a chocolate brownie with its paper thin crust and soft squidgy centre!  This particular one is punctuated with walnut pieces with a background flavour of coffee, and uses one egg yolk along with 3 whole eggs.

This savoury tarte tatin is made with an egg enriched walnut shortcrust pastry. It makes a delicious starter or light lunch.

Small Batch Chocolate Chip Cookies

Raspberry and white chocolate mini trifles
These individual trifles, flavoured with raspberry and white chocolate, is another recipe which makes great use of two egg yolks.  Trifles are always popular in our family, but being individual these seemed that little bit more special.

French Canele
Known as Canele pastry or Canneles de Bordeaux, these delicious and petite French pastries have a soft vanilla custard filling with a sweet caramelized crust.  While they're not hard, they do take some time and practice. But they taste amazing so worth trying if you are up for a challenge.

Another classic way of using up spare egg yolks is by making homemade ice cream.  Fresh strawberry ice cream is the perfect refreshing dessert for hot summer days.  It bursts with seasonal berry flavour and is surprisingly easy to make.

Chocolate Pecan Brownies
This brownie recipe uses no less than 5 egg yolks (no whole eggs) along with a generous amount of dark chocolate, dark brown sugar, cream and pecans for contrast in texture.  As you can see they come out lovely, gooey and fudgey!
