Coffee & Walnut Chocolate Brownie

These coffee & walnut brownies are soft, squidgy and punctuated with healthy walnuts.  The classic flavour combination is teamed with lots of delicious chocolate in this brownie recipe.  They're the perfect bake when time is limited and the comfort of chocolate is needed.

What's a girl to do when time is of a premium but a therapeutic baking session is needed?  Make brownies of course!

What better quick bake is there than a chocolate brownie.  They're quick, easy and we all know how amazing that squidgy fudgey chocolate bake is to eat!

These coffee & walnut brownies may not scream of summer like our Strawberry & Basil Upside-Down Cake or these Raspberry & White Chocolate Tarts but they're perfect when you're in need of a good chocolate fix!

These brownies are packed with both dark and milk chocolate.  And when I say packed, there's 200g of the wonderful stuff in these beauties, perfect if you're in need of a chocolate hug! 

Of course if you prefer you're brownies a little darker and richer than feel free to replace the milk chocolate with more dark chocolate.  The brownies, with their paper thin crust, are punctuated with healthy walnuts which introduces a wonderful contrast of texture.

So, here's how to make Coffee & Walnut Brownies

Coffee & Walnut Chocolate Brownie

These coffee & walnut brownies are soft, squidgy and punctuated with healthy walnuts.  The classic flavour combination is teamed with lots of delicious chocolate in this brownie recipe.  They're the perfect bake when time is limited and the comfort of chocolate is needed.

Ingredients

  • 4 teaspoon coffee granules we used Douwe Egberts Pure Indulgence
  • 3 tablespoon boiling water
  • 200 g butter unsalted + a little extra for preparing the brownie tin
  • 100 g plain chocolate broken up
  • 100 g milk chocolate broken up
  • 3 eggs
  • 1 egg yolk
  • 100 g golden caster sugar
  • 175 g light muscavado sugar
  • 125 g plain flour
  • 70 g walnut halves quartered

Instructions

  • Pre-heat the oven to 160c / 140 Fan / Gas 3. Prepare the brownie tin. Grease and fully line the brownie tin with greaseproof paper, ensuring there is excess paper beyond the edge of the tin to aid the removal of the brownie once cooked.
  • Melt the butter and chocolate. Cube the butter and place into the bowl with the broken chocolate. Set the bowl over a pan containing some water. Ensure the base of the bowl doesn't touch the water in the pan. Place the pan on the hob over a low heat. Allow the butter and chocolate to slowly melt, stirring periodically with a spatula. Once the mixture has completely melted remove the bowl from the pan. Sit the bowl on a clean cloth / kitchen roll to dry the underside.  Allow the melted chocolate to cool for a few minutes.
  • Meanwhile prepare the coffee. Spoon the coffee granules into a cup and add the boiling water straight from the kettle. Stir until dissolved. Set aside to cool.
  • Mix the eggs and sugar. Place the sugar and eggs (including the extra egg yolk) into a large mixing bowl. Use a balloon whisk to mix until well combined.
  • Combine the two mixture. Pour the melted chocolate and butter mixture onto the combined eggs and sugar.  Mix together well.
  • Finish the brownie batter. Add the prepared coffee and mix well. Sieve the flour into the bowl and fold it in with a spatula. Add most of the walnuts to the batter and mix until just combined.
  • Fill the brownie tin. Pour the batter into the prepared brownie tin. Scatter over the reserved walnuts. Bake. Place the brownie tin in the centre of the oven and bake for 40 - 45 minutes. You may need to rotate the tin after about 25 minutes of baking.
  • Cool. Pour some water into the base of a large roasting tin. You're aiming for it to be about 1 - 2cm deep. Remove the cooked brownie from the oven and sit the brownie tin (containing the brownie) into the tray carefully so as to avoid splashing the brownie.
  • Slice. Once fully cooled use the excess greaseproof paper to lift the brownie from the tin and sit it on a board. Slice into 9 equal pieces. Use a pallet knife to remove the slices from the greaseproof paper.

Cook's Tips
a)  It’s key to avoid over baking the brownie.  Removing it too soon will result in it being too soft, though over baking it will create something more cake like.  When ready it will no longer wobble in the centre, though an inserted skewer will still hold some moist crumbs. 
b)  Cooling the brownie in the water bath (step 10) will stop the cooking process giving you a softer brownie
c) Store in an airtight container in the fridge. 
d)  Allow the brownies to come back to room temperature before enjoying any slices which have been chilled. 
e)  Brownies are best eaten the day after baking.
f)  If you enjoy richer brownies substitute the milk chocolate for more plain chocolate.

    even if I don't like cooking, now and then I succumb to temptation (and since I discovered "Recipes Made Easy" and "Only Crumbs Remain", my time in the kitchen is bound to give great results with little effort). last week I did try this recipe and it's really been a delicious success. only thing I did change was to use only dark chocolate for the whole necessary quantity - as I'm not a fan of the milk one -. once again, dear Mrs. Jacqui, thanks for sharing your knowledge with us.

      He is a worry sadly Choclette, he's having a bit of an 'off' day today. Sadly he has one of those conditions which can't be cured but we have to 'manage' it with specific foods and supplements, and lots of TLC.

    I love chocolate and coffee combination so these brownies look so tempting. Hope Furbaby is doing well. We're just visiting our son and his cat Pumpkin is sick... its heartbreaking to see her like that. She's on medication and eating a bit. So fully understand what you've been through.

      Thankyou so much 🙂 I have to admit that I have never had a coffee & walnut cake! I know, I shall have to make amends! The best way I can describe them is to say that they are beautifully dense (so not light and fluffy like a cake), with a rich chocolate flavour. The coffee definitely is noticeable and the walnuts give a lovely contrast of texture.

    Ive said it before but Im now thinking I might have to stop myself from seeing your posts. So many seriously yummy recipes and these well Yes please.

    Glad Furbaby is on the mend. I have two adorable young cats Treacle and Nutmeg and I would hate to see them unwell. Nutmeg in particular is tiny anyway. So I know how you must feel.

      Yeah, it's not much fun at all when he's poorly, as anybody who is an animal lover will understand. They become so much part of the family don't they. But because they can't actually tell us where they feel sore or poorly etc, it seems so much more difficult. Thankfully, despite another little dip a few days ago, he's now seeming to be feeling much better!

    Poor little Furbaby - and poor you. Sounds like you've both had an awful week. Glad to hear he's now on the mend. And totally agree with the therapeutic powers of brownies 😀 I've often made brownies with walnuts, and often made coffee and walnut cakes/cupcakes...but never thought of making coffee and walnut cupcakes - LOVELY idea!! May have to try that out next time I bake 😀 Eb x

      Ooh yes, I can completely recomend trying coffee & walnut in brownies Eb! The few pieces that we shared were completely gobbled up too!
      Furbaby's doing much better, touchwood, thankyou. He did have a few more poor days but seems to be steadily improving :-D, though I must say it is very much like a rollercoaster with him!
