Redcurrant Recipe Collection

Redcurrants, those vibrant little berries bursting with tangy flavour, offer a unique blend of tartness and sweetness that can enhance a variety of dishes. I've put together a collection of my favourite redcurrant recipes for you to try.

Although delicious eaten straight from their stems, if like me you adore these sweet juicy summer fruits that burst with flavour, whether you've just picked a fresh batch from the garden, found some at your local market or green grocers, or spotted their rare appearance in  the supermarket, you are sure to be looking for new ways to serve them.

What are redcurrants?

A redcurrant is a small, bright red berry that grows in clusters on shrubs belonging to the genus Ribes. These berries are known for their tart flavour and glossy bright  red appearance. Redcurrants are native to parts of Western Europe and have been cultivated for centuries.

Redcurrants have a tangy, slightly sweet flavour with a high acidity, making them ideal for both sweet and savoury dishes.

They are rich in vitamins C and K, and also contain dietary fibre, antioxidants, and essential minerals.

Harvested during the summer season they are usually available in the UK from July through to early September. 

How to store redcurrants

Redcurrants will keep in the fridge, for up to three days. Don't wash them before storing or they'll go soggy.

Alternatively, you can freeze them. Place the redcurrants on a tray and freeze, then transfer them to a freezer bag or container. Freeze for 10-12 months.

I tend to leave mine on the trusses as it can be quicker and easier to remove the stems while they are still frozen. It also means I can use some trusses straight from the freezer for decorations.

However, you can also remove them from the stems before freezing. If you do not wash them, they won't stick together, and then you can just tip out as many as you want at a time. 

How to use Redcurrants 

Their intense sweet tangy flavour makes them very versatile and can be used in both sweet and savoury recipes including jams, jellies, sauces, desserts, salads, and beverages.

Sprigs of redcurrants can look stunning and add a pop of colour when used as decorations for desserts and cakes.

Easy Peach and Redcurrant Cake
Fabulously light and moist, this almond cake is studded with redcurrants and pieces of peach. Easy to make, it is delicious served on its own with tea, or with cream or ice cream as a dessert.

Elderflower and mascarpone cream tartlets
These pretty tartlets are decorated with fresh redcurrants and whitecurrants. The jewel like appearance of these berries works well these little bite-sized tartlets.

Redcurrant cheesecake
An easy light and airy no bake cheesecake. Flavoured with a hint of lemon and a delicious tangy redcurrant compote marbled through it.

Easy Mascarpone and redcurrant ripple ice cream
Made from just 4 ingredients there is no tricky custard to make for this tangy redcurrant ripple ice cream. Refreshing and fruity a perfect summer treat.

Homemade redcurrant jelly
Made with just 2 ingredients without the need for added pectin. This easy redcurrant  jelly is full of delicious summer fruit flavour. Use with savoury dishes or as an alternative to jam.

Raspberry and redcurrant jelly
Raspberries and redcurrants -  What a combination! The slightly tart redcurrants compliment sweet juicy raspberries perfectly in this raspberry and redcurrant jam, giving the jam just the right amount of acidity to really make the flavours zing.

Lamb chops with redcurrant jus
Whilst soft fruits are usually reserved for desserts and bakes, they can also compliment savoury dishes too. Lamb chops with redcurrant jus is a case in point. The sharp tang from the redcurrants cuts through any fattiness from the lamb and compliments the meat perfectly.
