    If you're look for some new and exciting beetroot recipes, whether that's a refreshing salad, a more substantial main meal or even a sweet bake then continue reading!

    Although we often think of beetroot as being a salad vegetable (though there's certainly nothing wrong with that), the humble beet can be used in so many other ways.  Savoury bakes, cakes, pizza, and even shakes!  This collection of 14 beetroot recipes, brought to you with thanks to some top UK food bloggers, definitely has something for everybody!

    So if you're looking for some new and inspiring ideas, are unsure of how to make the best use of a bunch of fresh beetroots which may have been gifted to you, or even have a jar of pickled beetroot lurking in the back of the cupboard begging to be used, then check out these recipes and follow the links in green for the actual recipe.

    Beetroot Salad Recipes

     

    Beetroot, Kale and Orange Salad from Eb at Easy Peasy Foodie

    • Requires 8 small cooked beetroot (or 4 larger ones).  Serves 4.
    This refreshing salad, built with kale, orange, mozzarella and of course beetroot, is easy to make and would surely be perfect for the warm weather.

     

     Beetroot and Feta Salad from Jacqueline at Recipes Made Easy

    • Requires about 400g bunch fresh beets.  Serves 2 as a light meal or 4 as a side salad.
    This
    easy salad makes great use of the classic combination of beetroot and
    feta cheese.  The added toasted hazelnuts bring a lovely crunch to the
    salad.

     

    Butternut Beet Salad from Clare at Easy Peasy Lemon Squeezy

    • Requires 4 small beets.
    If
    you love the beetroot and feta combination, why not try it in this
    slightly warm salad with butternut squash noodles, pumpkin seeds and
    pomegranate seeds.  It's a Kaleidoscope of colour and textures!

     

    Beetroot Zucchini Apple Ribbon Salad with Pecans and Maple Vinaigrette from Monika at Everyday Healthy Recipes

    • Requires 1 large beetroot.
    The
    use of a spirilizer makes Monika's salad look very pretty and
    undoubtedly interesting.  The chopped apple and pecans contrast with the
    ribbons of beetroot and courgette (zucchini) beautifully both in terms
    of shape but also texture.

     

    Beetroot Soup Recipe

    Thai Beetroot Soup from Lesley at Lost in Food

    The wonderful earthy notes of beetroot sit along side the fresh thai flavours, of lemongrass, ginger, chilli and coconut cream in this lovely homemade soup.

     

    Main Meal Beetroot Recipes

    Beetroot & Lentil Vegan Pie from me, at Only Crumbs Remain

    • Requires 3 good sized beetroots.  Serves 3-4 people.
    With a wonderful earthy flavour, this vegan beetroot & lentil pie
    recipe produces a delicious, colourful and nutritious meal which is
    perfect served with vegetables and potatoes or a simple salad.

     

    Sausage and Beetroot Tray Bake from Kirsty at Hijacked by Twins

    • Requires 2 beetroot, serves 4-6 people.
    A
    delicious and easy traybake meal, which is packed with veggies.
    Although Kirsty used Cumberland sausages here, the recipe could easily
    be adapted to cater for vegetarians and vegans alike.

     

    Mini Calzone with Beetroot, Thyme and Pumpkin Seed Pesto and Cheddar Cheese from Mandy at Sneaky Veg

    •  Requires 400g jar sliced beetroot.  Makes 8 mini calzoni pizzas.If you've got a jar of beetroot lurking in the back of the cupboard, then why not give these mini calzoni pizzas, packed with beetroot, pine nuts, pumpkin seeds and cheddar cheese, a try?
    Cheesy Polenta with Maple Balsamic Roasted Beetroot from Bintu at Recipes From a Pantry

    Creamy,
    cheesy, comforting polenta topped with chopped roasted beetroot in a maple balsamic juice.  What more is there to say, it looks and sounds absolutely
    divine! 

    Bakes using Beetroot

    Beetroot Carrot & Goat's Cheese Muffins from Choclette at Tin and Thyme

      300g beetroot.  Produces 12 savoury muffins.
    These easy to make savoury muffins make great use of a
    classic combination of beetroot and goats' cheese.  The portable nature of the bake makes them perfect for picnics, packed lunches or simply as a delicious savoury snack.

    • Requires 100g beetroot.  Produces 9 cupcakes.
    An easy to make beetroot and chocolate muffin style cupcake, which is
    just as delicious with or without the vibrant pink beetroot frosting.
    These cupcakes are beautifully moist, and are punctuated with chocolate
    chips.

    Even though these pretty pink shakes, topped with a whipped coconut cream look indulgent and naughty, remember that looks can be deceptive!  These easy to make shakes are packed
    with goodness from the bananas and beetroot, but they're still undoubtedly yummy.
    Simple Slow Cooked Beets from Camilla at Fab Food 4 All

    Cooking
    beetroot often means boiling or roasting it.  But why not use your
    slow cooker instead?  It's a method which is perfect when you have a busy day ahead.  Check out

      I am tempted by Vanilla Beet FreakShake (Healthy Treats for Kids) i normally don't like beet much but the color on that shake is making me rethink. Beet is good for blood no?

      Great round up Angela, beetroot means summertime for me, too hot to prep dinners so reach for the salad stuff and pimp a ploughmans! It's like one huge buffet on my plate..yes these recipes are awesome and I'll work my way through them...but simple beet in a salad makes me smile...and get pink fingers!

        Ooh definitely give it go again Cliona. I used to hate walnuts as a child and never touched them since, but recently I tried one and realised that they weren't as nasty as I seemed to remember. OK I admit i prefer almonds and pistachio to walnuts, but i now won't dismiss them. Hubby is a beetroot-phobe too but actually enjoyed the cupcakes and I can imagine the shake would be a good way to include it too.
        Hope you ralise you don;t mind it if you try beetroot again 🙂
